Banana Bread Recipe Inspired by Mary Berry

As Sunday is always a lazy day, waking up to make this bread and the smell of freshly made bread is something special. There's nothing better than starting the day with a slice of homemade banana bread, warm from the oven. This recipe, inspired by Mary Berry's all-in-one method, is foolproof and quick, perfect for those lazy Sunday mornings. Adding condensed milk, vegetable oil and a touch of milk makes it even more moist and delicious. Ingredients
- 2 Ripe bananas mashed
- 1 Tspoon butter softened
- 1/2 Cup Vegetable oil
- 1/2 cup Brown sugar
- 1 Large eggs
- 1/2 cup Condensed milk
- 1/4 cup Milk
- 2 cups Self-raising flour
- 1/2 teaspoon Baking soda
- 1/4 teaspoon Salt
- Chocolate Chip Optional and as desired
Instructions
- Preheat the Air Fryer: Preheat your air fryer to 160°C. Grease and line a suitable loaf pan that fits into your air fryer basket with parchment paper.
- Mash the Bananas: In a large mixing bowl, I don't normally mash the smooth, I like them a bit Chunky mixed.
- All-in-One Mixing: Add the softened butter, vegetable oil, brown sugar, eggs, and banana to the bowl. Mix everything together until well combined.
- Add Dry Ingredients: Sift the self-raising flour, baking soda, and salt into the bowl. Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Add Condensed milk and mix
- Add milk and mix well
- Pour into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Add in the Chocolate Chips and stir in the batter so the chocolate chip is coated in batter
- Bake in Air Fryer: Place the loaf pan in the preheated air fryer and bake for 45 minutes, or until a skewer inserted into the center comes out clean. Check the bread around the 40-minute mark, and if the top starts to brown too quickly, cover it loosely with aluminum foil (Mine took 45 minutes).
- Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy with a cup of tea or coffee.
- You are free to double this banana bread recipe if you have lots of bananas to use up.

Tips and Variations:
- Add-ins: Apart from Chocolate chips, you can also stir in a handful of chopped nuts, or dried fruit for extra texture and flavor and this is optional
- Toppings: Sprinkle the top with a little brown sugar before baking for a crunchy, caramelized crust.
- Storage: Store any leftover banana bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
