This is one of my favourite food and I don’t get tired of eating red beans. Red kidney beans stew pairs well with a variety of accompaniments. Serve the red kidney beans stew over cooked white or brown rice, crusty bread, baguette, or even garlic bread can be great for mopping up the stew just to mention a few. and with a twist, I always add some meat, chicken, or fish to add more flavour to the stew. This time I am adding tinned Mackerel fish to the stew.
Ingredients
- 2 cups dried kidney beans (or tinned kidney beans, drained and rinsed)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon Thyme
- 2 diced tomatoes (or tinned tomatoes)
- 1 cups vegetable broth or water
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
- 3 tinned Mackerel fish (Optional)
Instructions:
- Prepare the Beans (if using dried):
- If using dried kidney beans, soak them overnight in water. Drain and rinse the beans before cooking.
- Cook the soaked beans in a pot with enough water until they are tender. You can also use a pressure cooker to expedite the process.
- Make the Stew:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper. Sauté until the vegetables are softened.
- Add the chopped tinned or diced tomatoes (with their juice) to the pot and stir.
- Pour in the vegetable broth or water and add the cooked kidney beans.
- Season the stew with thyme, chili powder, paprika, salt, and pepper. Stir well to combine.
- Simmer:
- Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for at least 30-40 minutes to allow the flavors to meld together. If using canned beans, a shorter cooking time may be sufficient.
- Add tinned fish (You can add any type of meat if desired)
- Adjust Seasoning:
- Taste the stew and adjust the seasoning if necessary. Add more salt, pepper, or spices according to your preferences.
- Serve:
- Once the stew has thickened and the flavors have melded, it’s ready to be served.
- Garnish:
- Garnish with fresh parsley if desired.
